LEMON & POPPY SEED PROTEIN BALLS

Time: 5-10 minutes
Ingredients

2 tbsp unrefined coconut oil
1 1/3 cups of almond meal
1/3 cup vanilla protein powder (or lemon if you can get it!)
3 tbsp pure maple syrup
4 tbsp pure lemon juice
Zest of 1/2 to 1 lemon (depending on how lemony you like it)
1-2 tsp poppy seeds

Optional
Shredded coconut on outside
1-2 tbsp more maple syrup (if you prefer it sweeter)
Exchange protein powder for more almond meal or coconut flour

Method

Melt coconut oil in a small saucepan, into a liquid

Add all ingredients to a high speed food processor

Taste test here - you may need more maple syrup if you like it sweeter or more lemon juice/zest

Blend again if added more ingredients

Take teaspoon sizes of mixture out of the processor and shape into balls

Roll into the shredded coconut if you are using
​

Refrigerate for at least 4 hours or ideally overnight, so that they firm up and enjoy!
