CHIMMICHURRI SAUCE

Ingredients

1/2 bunch fresh parsley, can keep stems on
1/2 bunch fresh oregano, leaves removed from stems
1-2 fresh red chilli, seeds in or out (up to you)
4 fresh garlic cloves
3 tbs red wine vinegar
1/2 cup extra virgin cold pressed olive oil

Method

Roughly chop parsley and oregano bunches. You can chop these as far down as you like, but I tend to like a more rustic chimmichurri, so I don't chop them down a lot.

Peel and finely chop the garlic cloves.

Finely chop the fresh chilli. Leave the seeds in or out depending on how much heat you like.

Add all ingredients to a small bowl.

Add red wine vinegar and olive oil to the bowl and mix until combined.
