HOME MADE GRANOLA

Serves 8-10

Granola

Ingredients

 

2 cups of organic rolled oats

2 tbsp organic coconut oil (can also use butter if

you have an aversion to coconut oil)

1-2 tbsp of organic honey

2 cups of mixed nuts, it can be:

- Macadamias

- Walnuts

- Pecans

- Hazelnuts

- Almonds

- Peanuts

(Whatever you have in the pantry)

1/2 mixed seeds:

- Pepitas

- Sunflower seeds

- Chia seeds

- Poppy seeds

- Sesame seeds

(Again, whatever you have in the pantry)

Method

​​

  • Preheat your oven to about 180-200 degrees celsius.  Line a baking tray with a peice of unbleached baking paper.  Depending on the size of your baking tray, you may need 2 trays.

  • Add oats to large mixing bowl.

​​

  • Roughly chop all nuts and seeds (if needed).  They don't need to be tiny, having them a little chunky is a good thing. Add to bowl with oats.

  • Melt the coconut oil in a small saucepan on the stove.  Once nearly melted, add the honey and stir to combined.  They will not fully combine, but just mix so its not all in separate clumps.
     

  • Add coconut oil and honey mixture into mixing bowl and stir until it covers all of the oat mixture well.
     

  • Spread mixture out over baking paper.  Don't pile the mixture up, spread it out on the tray so that it will bake evenly.  However, it is ok to have larger clumps that stick together if you like a chunkier granola.
     

  • About 20 minutes in, check on the mixture.  If it is turning golden already, you will need to use a spatula or egg lifter to turn the mix over, so it cooks evenly on both sides.

  • Check again after another 20 minutes and remove from oven if golden.

  • If it doesn't look quite ready, return to the oven for another 10-20 minutes or until golden.

​​

  • Remove from oven and allow to cool completely before storing in an airtight glass jar.

​

  • The granola will keep in an airtight jar for months.
     

  • Enjoy with yoghurt, milk and fruit of choice!​
