CRISPY ROASTED CHICKPEAS
Difficulty level: Easy
Time: 5 minutes prep + 30 mins cooking

A fantastic snack idea, which is high in protein and fibre!
Ingredients
1 1/2 - 2 cups of dried chickpeas
1 tbsp extra virgin olive oil
Juice of 1/2 lemon
Sea salt
Paprika, curry powder or other spices (to sprinkle)

Method​
- Place chickpeas in a bowl and cover with cold water. Soak overnight.

- The next day, preheat oven to 180 degrees. Line a baking tray with unbleached baking paper.

- Spread the chickpeas across the baking paper and pat dry with paper towel.
​​
- Drizzle chickpeas lightly with olive oil, lemon juice, sprinkle with sea salt and your desired herbs or spices. Toss until all combined.​

Roast chickpeas for approx 20-30 minutes or until golden brown. If you have an air-fryer, this works even better!

Once golden brown, cool and then store in an air-tight container. They are best eaten within 2 days of making.
